Delicious looking appetizers/ snacks



I decided to that I would post more recipes...well I was just looking for this no-bake oreo cheese cake recipe and I found SO MANY more good recipes! I just copied and pasted it from the blog but she got most of the recipes from pinterest. If you try any of these let me know if they are good and how it went! :) Also, a side note, my wife made the Giant Oreo Cake that I posted a few posts back and it was really easy and DELICIOUS!!! It was to die for! I also made the brownies with the chocolate chip cookie dough, oreos and brownie batter. They were delicious! I even made them for my wife's family reunion and everyone loved them! At any rate, I hope you can share recipes and enjoy making some of them that I have posted! :)

Fruit Salsa and Cinnamon Dippers
To create the little Cinnamon Dipper bowls I first cut out a bunch of circles from flour tortillas.
Then I placed the tortilla circles on the bottom of a mini muffin pan, creating a bowl shape.  I spritzed them with water, sprinkled them with cinnamon and sugar and baked for about 5 mins at 350 degrees F.
Now they are all crispy and delicious.
I combined fresh and frozen fruit, diced, into a fruit salsa.  I added about 1 Tbsp of lemon juice and allowed the flavours to marinade overnight.  I had; pear, nectarines, raspberries, kiwi and blueberries.
Yum ~ and just about the only 'healthy' appetizer on the menu ;)
Baked Spinach Dip Mini Bread Bowls

The girls nearly died when they tried these - so good!
And I got many requests to bring these bread bowls to our next girls night.
I started by cutting rounds out of Pilsbury Pizza dough and placing them into muffin cups.
Then I mixed my ingredients {these differ from the original recipe ~ so if you liked the ones from Spa Night girls, use these ingredients}:  150g frozen spinach {defrosted}, 1 tsp minced garlic, 3oz cream cheese {softened}, 1/2 c sour cream, 2 Tbsp dried Parmesan cheese, 1/8 tsp chili pepper, a pinch of salt and a pinch of pepper.
Using a cookie scoop, I placed the mixture in the muffin cups and topped with 1/3C shredded mozzarella cheese.  Bake at 350 degrees F for 18-20 minutes.  This recipe yielded 12 bowls for me.
Um.  May I have some more?

No-Bake Oreo Cheesecake
This is another recipe from Pinterest.  You can find it on Babble as well.
I combined the cream cheese, sugar and vanilla in the mixer.
Then folded in cool whip.
And crushed oreos.
Each guest had there very own cute little jar of cheesecake.  I though that they could take it home and savour it later.  Oh no.  They all ate it during Spa Night ~ no one wanted to share it with the husbands ;)
Easy Bacon Cheese Rolls
I just threw this one together.  Pilsbury Cresent Rolls, shredded cheddar cheese and cooked bacon bits.
I started by unrolling my dough onto a cookie sheet.
Then I topped each roll with cheese and bacon and rolled them back up.  I baked them according to the package directions ~ 10 minutes at 350 degrees F I think.

This is my go to recipe for school lunches and easy appetizers.

I wrap them individually in saran wrap and freeze them for lunches.  I have served them at our Mad Hatter Tea Party, this Poker Night Birthday Party and shared the recipe once before here
Everyone loves them!  I hope that you will too.

The goods:
5.5 oz tomato paste
1 1/2 - 2 cups shredded mozzarella
40 rounds of pizza pepperoni
2 rounds of white bread dough
I use my 1.5 lb breadmaker to make the dough and split it into two batches. 
That is enough to make 24 pizza buns. 
Begin by spreading the dough into a large rectangle.
Spread half of the tomato paste over the dough.  Leave one edge of the dough free of toppings.
Sprinkle with 3/4 - 1 cup of mozzarella.
Layer with 20 pieces of pepperoni in two rows.
Now begin rolling the dough into a log.  Work towards the edge with no toppings.
Stretch the final edge over top of the roll and pinch the dough together.
Slice the roll into 1" segments.  Repeat these steps with the second round of dough.
Place on a greased cookie sheet and bake at 350 for 25-30 minutes.

Finals Week

WOW! What a week! So I somewhat apologize for my last post...however I did speak from my heart and it did help me greatly. However, a statement I made in my last post about being a protective daddy came into play even more so the DAY AFTER that last post....so on Tuesday!! Our landlord hired someone to paint the vacant apartment and on Monday he took 6 hours or so to just put texture on the walls...okay that sounds like a lot but not when you just spray a couple times on the wall...like a spot here and a spot there...but then on Tuesday I was looking out the window and I saw him sitting in his car DRINKING ALCOHOL!!! I couldn't believe what I saw! He poured some alcohol from a whiskey type bottle or rather a flask shaped bottle and he poured that into a very large coffee mug. Then he poured some dark pop such as coke. Then he got out of his car and went into the vacant apartment to "work". Needless to say, I called my landlord because I had to go to class and work and leave my wife and daughter in the same building as this man whom we don't even know! (just as a side note, I don't care what people do in their free time. It is theirs and they can do what they please but when you are at work or supposed to be working, you better not be drinking especially when you are working around FAMILIES!)I told Whitney to lock the door just in case because we have never seen him before in our lives and we don't know how the alcohol could've reacted with him. Anyway, so I saw that and my landlord didn't get back to me until 2 minutes before I clocked in! But we got it somewhat resolved. The next day, the worker just showed up with some other rough looking guy and sent me a text stating that the apartment was open. "Well duh its not going to be opened! You didn't let me know that you were coming in the first place AFTER I asked you to give me a heads up at least the night before so I can plan accordingly. I do have a life too ya know." but yeah so they didn't get any work done because I wasn't sure if my landlord wanted them to enter or not. Well they came Thursday and brought a different person with a third person to get the painting done...oh wait let me go back. On Tuesday it took him 6.5 hours to tape the apartment. PERIOD. That is what he did THE ENTIRE SIX AND A HALF HOURS! I was appalled! I couldn't believe that he didn't do anything else. I told my landlord what was going on and I told her I personally, not having any painting experience behind me, could have taped up that apartment in an hour. Just saying. So Thursday comes around and the three of them got the entire apartment painted except part of the kitchen which was strange cause it was hardly more work to just finish the little bit there. But then I decided to mow the lawn. After mowing the lawn I had noticed that the lawn was quite brown so I decided to mow. Well that was a mistake because little did I know that there was a leak in one of the pipes that I was using. After a couple hours of watering I decided to move the sprinkler again and I noticed some water coming out of apartment three(the vacant one). Well, I open up the door and the carpet was soaked and the ceiling was cracked and caving in! I ran and turned off the water but that didn't do much because 2.5 hours later, the ceiling fell off! It was a clean fall and the ENTIRE CEILING fell! I couldn't believe what I was dealing with but then again, EVERYTHING goes wrong during finals week. :/ My landlord didn't get back to me until this morning(I called her 3 times last night and left 3 messages plus sent her pictures and text messages and an email.) Once she called me she told me the insurance company would come out and contractors, etc. I told her I had a final at 1030 but I'd be free anytime after. Everyone showed up at 1015...they didn't leave until about 1130 so I had to throw things together and I ran up to campus to see if my teacher would be understanding...luckily he was and I was able to take the exam even thought that was the thing furthest from my mind at the time! I did horrible on the exam and I'm hoping and praying that I will pass...if not I have to retake it...:( But now I am completely done with finals week and I am SO READY for my 7 week break! It is a much needed break!!! Just saying....things are getting fixed up with the apartment and hopefully all will go well. I get to go work in the Temple tomorrow and that is some much needed peace that I need in my life currently! Just saying...Hopefully my next posts can be a little more happier...maybe I could've posted about my bday, even though it wasn't all that exciting except we watched the movie RIO which reminds me so much of BRAZIL and I miss it a lot!! Anywho, I need to go to bed now so NIGHT!

Okay so it's been forever and a half since I've blogged but I've been real busy! Okay! haha Julia Rose Teig was born June 24th 2012 (a couple days after my last blog post) and she was 7 pounds 5 ounces and 18 1/2 inches long! :) She is the cutest little thing and I'll have to post some pictures but that is for another time.

I'm currently on an assignment given by myself to myself. ;) Okay, sorry but I need to rant. We have some neighbors that we'll just say are wonderful people in their own element, I'm sure, but as neighbors they are kind of stinky. Let me explain. I was on campus a week or so ago and I ran into one of our neighbors. He had apologized for banging the wall, which I didn't hear but it was late he said. Then, being the kind person I am decided that the same night Ms. Julia was crying so I wanted to apologize if he could hear her. Well instead of saying "yeah we did but its okay" he said "yeah but you do what you have to. We got ear plugs and we'll use them if we need to. You just take care of your family."!!!!!

Can you believe that??!!?!?! Okay so to me that was a little more insulting than anything. I don't think he meant it like that but oh man did it come off that way! I mean THANK YOU for your permission to take care of MY family! Really? Who do you think you are telling me that I can just take care of my family? By the way, Julia doesn't cry very loud or very often. I am super upset over this and it's been forever and a half. I think I'm more upset about it because I've tried to love my neighbors by helping them out or whatever but each time I do, I get criticized or not appreciated in the sense that they turn around and insult me. I'm not mean to them but I do try to be nice to them until recently. I did take Julia out of our bedroom when she would cry as I didn't want to disturb our neighbors but now I want to have a sleepover with our friends who have a three month old that is getting her teeth in and have them sleep over to just annoy our neighbors and have them REALLY know what it is like to have a baby living next door so that they can appreciate our Julia. Goodness! I mean we can't hear our neighbors at all. Our previous neighbors couldn't hear anything that we did and we were banging on the wall putting in nails and such and there was a baby underneath them and they couldn't hear that baby but now these guys can hear our baby?!?! Whatever. Anyway, these neighbors are again, wonderful children of our Heavenly Father and I have to try and see what He sees in them...this whole love thy neighbor as thyself thing is REALLY difficult and I didn't think it would be that difficult!...

I'm the on-site manager as I've stated before and I get a ton of complaints from these neighbors about stupid things. Just saying. She is a interior design major and I can't remember what his major is. But I can definitely see a social class difference because they just got married maybe 4 months ago and this is their first apartment. It is a 2 bedroom apartment that they are getting for $500 a month which is REAL cheap for this area! And they think they complain about every little detail. Well sorry to break it to them but your first apartment should be your worst apartment. My wife and I feel BLESSED beyond measure on the fact that we got such a wonderful apartment! We didn't even dream of such a place for such a price. But again, we all have different backrounds and I do respect that. But going back to insulting me. We have our different backrounds but you don't have to insult me or my new family. Buddy, I get less sleep at night now because I have daughter whom I love TO PIECES! However, you don't mess with this daddy cause he is now in protective mode and will do ANYTHING for his children and wife! Just saying...At any rate, this really isn't doing any good but it sure is making me feel better. It just doesn't solve my problem! haha Well I hope you all have a good night's rest and I will try. ;) P.S. This is finals week as well so I have exams that I am taking on top of that load of crap that my neighbor says.."you just take care of your family" okay so what do you expect that I am doing? Just letting her cry and cry just because I love it when she cries? I don't think so! I think I do everything I can because I like it when she's quiet. Anyway, some people are dumb and I just have to accept that...right? anywho, I'll post later probably when Aunt Barb is here(she's coming Wednesday to see Ms. Julia!!! I can't wait! :)) I'll post pics soon!
